The grapes are hand-harvested and gently pressed after a short maceration period. Fermentation occurs spontaneously with wild yeasts, and the wine then ages on the lees for several months to develop structure and depth. It is bottled unfiltered and without added sulfur – production is limited to approximately 2,000 bottles per year. In the glass, it displays a deep pomegranate rosé color with expressive aromas of tomato, strawberry, cherry, dried cranberry, herbs, and a hint of rosewater and Turkish delight. On the palate, the wine is medium- to full-bodied, with fresh acidity, fine tannins, and a savory structure. Notes of fresh and sun-dried tomato mingle with ripe red fruits, marjoram, delicate spice, and dried rose petals. The finish is textured, slightly saline, and lingering.
