Pomace from carefully selected, ripe and healthy grapes grownin the Valley of the Muses and coming from nine different varieties. The pomace of each variety is distilled separately drop by drop and at low temperature in a copper alembic. In this way, only the finest flavors are obtained. The heads and tails of the distillate are discarded to keep only the heart, which is distilled again using the same slow and gentle process. Finally, the individual distillates are mixed in different ratios. The main white varieties are Assyrtiko and Malagouzia, the main red varieties are the rare local variety Mouhtaro and Merlot.
