Hand-harvested in mid-September, the grapes undergo a long, wild-yeast fermentation in 200L Greek clay amphoras. Only the free-run must is used, with a minimal addition of pine resin (1 kg per ton), sourced from the pine trees surrounding the vineyard. The wine is bottled unfined and unfiltered, with only a small amount of sulfites added. It displays a yellow hue with aromas of lemon blossoms, citrus peel, dried herbs, and subtle, elegant notes of fresh pine.
